Banana Kefir Ice Cream

Ingredients

  • 4 Ripe Bananas
  • 150ml Healthy Kefir of your choice
  • 2 tsps Honey
  • 1 tsp Vanilla Extract

Method

  1. Chop your bananas and freeze them for around 2 hours, or until they are completely frozen through.
  2. Once your bananas have frozen simply add all the other ingredients, along with the banana, to a food processor and blitz. You will get instant soft scoop Banana Kefir ice cream, if you prefer it to be a little more frozen once it is mixed just place it back in the freezer for another hour or so. Super simple, full of flavour and healthy probiotics.

Fluffy Kefir Pancakes

Ingredients

  • 500ml Healthy Cow Kefir Milk (at room temperature)
  • 225g Plain Flour
  • 4 tbsp Melted Butter
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 2 tsp Baking Powder
  • 2 tbsp Stevia Sweetener/ Honey
  • Oil for frying

Toppings

  • Strawberries or fresh fruit of your choice
  • Chocolate
  • Maple Syrup

Method

  1. Whisk the eggs, sweetener and vanilla in a bowl until it is all combined.
  2. Mix in the warm Kefir and melted butter to your egg mixture.
  3. In a separate bowl mix the dry ingredients, then whisk into your egg mixture. Once this is thoroughly mixed together leave your pancake batter for 5 minutes to prove. This allows the natural yeasts in your Kefir to activate and make your pancakes extra fluffy.
  4. Heat a frying pan with a little oil and ladle in a small amount of the pancake batter mixture at a time – they will rise so you don’t need to add too much, turn your pancakes to cook on either side.
  5. Add your toppings, serve and enjoy!
